Friday’s Flower…….well kind of

Not really a flower…..but then again, those tomatoes came from a flower…right?

Pesto Yesterday’s little harvest gave us our first pesto of the season…yum!  It’s been a few years since I have grown basil, but I quickly remembered why homemade pesto has been a big favorite in my house…..so much better than store bought…and so easy to make!

Pesto
1c fresh basil leaves
1/4 c olive oil
1-2 cloves of garlic (minced)
1T pine nuts
5T Parmesan cheese
1-2T melted butter

Toss all of the ingredients into the food processor starting with the basil and pine nuts, heat in the microwave for a minute to warm up…….then eat.  Yum!

  1. Few things beat homegrown, homemade pesto. I make a ton and freeze it – except for the parmesan which I add fresh. Dang, now I’m hungry.

  2. Doing that here too! My pesto recipe is a variation of yours. Have you tried half a bagel with pesto with a slice of tomato and topped with a slice of mozzarella or provolone in the toaster oven until melty? Awesome!

  3. Your pesto looks lovely! I didn’t get a chance to plant basil this year but hopefully I can remember to do it next year. I use it for pasta and roasted vegetables, a pesto cream sauce for chicken and shrimp and on toasted bread with sun-dried tomatoes. It’s great that you can actually freeze it in ice cube trays. I spray mine with non-stick spray and put 1 TBS in each spot. Then when it’s completely frozen, I go back and pop them out and put them all in a freezer zip bag. When summer is over, I can can still have some pesto from my garden. I just could kick myself for not planting it this year!

  4. Ok totally crazy questions what exactly is pesto for? I’ve seen it over and over, but I never really know what the heck it is for.
