Not really a flower…..but then again, those tomatoes came from a flower…right?
Yesterday’s little harvest gave us our first pesto of the season…yum! It’s been a few years since I have grown basil, but I quickly remembered why homemade pesto has been a big favorite in my house…..so much better than store bought…and so easy to make!
Pesto
1c fresh basil leaves
1/4 c olive oil
1-2 cloves of garlic (minced)
1T pine nuts
5T Parmesan cheese
1-2T melted butter
Toss all of the ingredients into the food processor starting with the basil and pine nuts, heat in the microwave for a minute to warm up…….then eat. Yum!

Few things beat homegrown, homemade pesto. I make a ton and freeze it – except for the parmesan which I add fresh. Dang, now I’m hungry.

My SIL keeps me in basil so we have homemade pesto around here, too. I love it tossed with shrimp and pasta. Mmmm.

Doing that here too! My pesto recipe is a variation of yours. Have you tried half a bagel with pesto with a slice of tomato and topped with a slice of mozzarella or provolone in the toaster oven until melty? Awesome!

Yum! Unfortunately, that is how our resident woodchuck feels about basil, too, so I’ve barely got enough to sprinkle on a salad or pizza this year.

Your pesto looks lovely! I didn’t get a chance to plant basil this year but hopefully I can remember to do it next year. I use it for pasta and roasted vegetables, a pesto cream sauce for chicken and shrimp and on toasted bread with sun-dried tomatoes. It’s great that you can actually freeze it in ice cube trays. I spray mine with non-stick spray and put 1 TBS in each spot. Then when it’s completely frozen, I go back and pop them out and put them all in a freezer zip bag. When summer is over, I can can still have some pesto from my garden. I just could kick myself for not planting it this year!
