Tomatoes and a recipe…..

It is absolutely amazing how different a garden can be from one summer to the next!  You may remember last year where my entire tomato crop was wiped out…so disappointing! 

This year however has been an entirely different scenario.  The tomatoes have been abounding.  Baskets such as the one above has been filled over and over and then over again.  So far we have 20 quarts of tomato sauce and a few pounds of tomatoes in the freezer …wheee! 

Now the next part may make you laugh………..I truly hate eating tomatoes…  Can you believe it?  I really love the flavor but hate the texture.  The pulp, the seeds, the skin how it pops in your mouth…ewww. 

Tomato dressing
This is why most of my tomatoes end up as sauce.  Interestingly enough though I found this tomato dressing that I absolutely love via tastespotting.  I get the flavor of tomatoes in my salad without any of my texture "issues" ..LOL.  I'm betting you will love it too!

Pomme D’Amour Tomato Dressing

Try this fresh slightly spicy tomato dressing on your next salad or as a dip with fresh vegetables.

2 medium tomatoes, slice into quarter wedges
¼ cup cold pressed extra virgin olive oil
2 tablespoons apple cider vinegar
2 cloves garlic
1 teaspoon sea salt
1 teaspoon fresh cracked mixed pepper
1 teaspoon
paprika, I like to use Hungarian paprika

Put all ingredients into the blender, except olive oil, and blend until mixed. While blender is still running slowly pour in olive oil, blend well. Serve immediately or store in a salad dressing bottle or container with a lid in the refrigerate. Keeps about 5 days. Shake or stir well before serving.

Makes about 1 1/2 cups

  1. Oh my goodness! The dressing sounds fabulous. Sadly, this is our year for a poor tomato crop. Many plants will die from frost before the green tomatoes ripen. There will be enough for this yummy dressing, however.

  3. I love the smell of fresh garden tomatoes but totally dislike eating them also! Gross. I will however, chop them very small, crush them and then drizzle with good EV olive oil, dash of balsamic vinegar w/salt, cracked pepper, garlic, fresh basil and fresh mozz cheese over nice slice of bread melted in the toaster oven. Well I guess that’s my recipe for bruchetta!?@# Have a pantry full of garden pasta sauce too:) and a third round of red raspberries harvesting.

  5. Your tomatoes blew mine out of the water this year! I will have to plant more next year. We did 8 plants and didn’t get as much as you seem to have but they sure were good! I know you must be thrilled to have such a great crop! I love that despite taking time off from blogging, you still have been working on projects. I feel like I am spinning my wheels lately. Gotta step it up!
